Italian Salsa Fresca Pizza on the Grill

Ingredients

  • 1 recipe pizza dough
  • 1/2 lb grated mozzarella
  • 3 Roma tomatoes diced
  • 1/4 cup red onion chopped
  • 1 Tbsp olive oil
  • 2 cloves of garlic minced
  • 1/2 tsp red pepper flakes
  • 1/2 cup fresh basil leaves chopped
  • garlic salt to taste

Instructions

  1. Heat grill to medium-high (needs to be very clean) and brush grate well with olive oil. Mix tomatoes, onion, oil, garlic, pepper, basil and garlic salt. Set aside. On well oiled foil, roll prepared pizza dough out to a rectangle approximately 12x18. Carefully place on grill. Watch very carefully. It is ready to flip in about 3 minutes, or when dough starts appearing dry on top and golden at edges. Flip over with tongs and cook other side for about 2 minutes. Remove from heat and place on to serving platter. Quickly sprinkle on cheese, then top with the salsa fresca.
