Potato Skins

This is a pretty classic recipe. I can't remember when potato skins starting hitting restaurant menus, but I am guessing early 80's. Pretty soon everything was flavored "potato skin." What was funny to me, is they became popular before it was cool to leave potato skins in mashed potatoes or potato salad. So, initially, they were an acquired taste. But acquire it, we certainly did!


  • 6 potatoes baked
  • 3 tbsp butter melted
  • garlic salt to taste
  • 4 oz shredded cheddar
  • 1/2 cup bacon cooked and crumbled
  • sour cream and chives


  1. Cool baked potatoes for 10 minutes.

  2. Preheat oven to 425°

  3. Cut in half lengthwise, and scoop out pulp, leaving about 1/4" of potato.

  4. On a cookie sheet, brush potatoes with melted butter and sprinkle with garlic salt.

  5. Sprinkle on cheese and bacon.

  6. Bake for 15-20 minutes, or until crispy.

  7. Top with sour cream and chives.
