I stumbled on these delicious things when my friend Shawna and I ate at The Luxe restaurant in Las Vegas. We had attended a photography convention together, and she showed me this spot just before we were about to board our flights and go home. I kept trying to wrangle the recipe out of the waiters, and had to take bits and pieces of what each one said (as well as a menu description) to be able to develop this knock-off recipe. The restaurant served them on one large platter with a blob of black beans and rice in the center. When making them at home, it was far easier to divide them on to smaller plates and serve each person individually.
