Holopchi (Stuffed Cabbage Rolls)

Whether it be dolmades or lettuce wraps, I think every culture has a version of rice and meat wrapped up in a leaf. Here is a lovely Polish variety, with cabbage, beef and tomato sauce.

Ingredients

  • 12 cabbage leaves
  • 1 lb ground beef
  • 1/2 cup instant rice uncooked
  • 1 medium onion chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 clove garlic minced
  • 15 oz can tomato sauce divided
  • 1 tsp sugar
  • 1/2 tsp lemon juice

Instructions

  1. Preheat oven to 350°

  2. Bring a large pot of water to a boil, add cabbage leaves. Turn off heat.

  3. Cover and let stand about 10 minutes, until leaves are limp (about 10 minutes.) Drain.

  4. Mix ground beef, rice, onion, salt, pepper, garlic and 1/2 cup of the tomato sauce.

  5. Place about 1/3 cup of this mixture onto the stem of each cabbage leaf, roll leaf around mixture, tucking in ends.

  6. Place cabbage rolls, seam-side down in a baking dish.

  7. Mix remaining tomato sauce with sugar and lemon juice and pour over cabbage rolls.

  8. Cover, and bake for 45 minutes.
