Potato Rolls (Bread Machine)

This rich dough also works great for sweet rolls and coffee cake. Make the dough ahead of time, and freeze some of it to bake later when you want fresh bread for dinner. Just shape into little balls, and put butter on them, and place them into a freezer bag. Voila! - Stacey

Ingredients

  • 1/2 cup warm mashed potatoes
  • 1 egg
  • 3/4 cup hot water
  • 1/3 cup melted butter
  • 1/3 cup sugar
  • 3/4 tsp salt
  • 3 1/2 cups flour
  • 1 pkg yeast

Instructions

  1. In a small bowl, gently beat egg into mashed potatoes. Add mixture to bread machine. Add remaining ingredients in order given. Set machine on DOUGH setting. Remove dough, and shape dough into 24 rolls. Place on cookie sheets (12 to a sheet.) Brush with melted butter and let rise until doubled in size. Bake at 400 degrees for 12-15 minutes. Let cool slightly, brush again with butter and dust with flour (if desired.)
  2. If you don't want to use a bread machine, mix together potatoes and egg in a large bowl. Add in remaining ingredients in the order given, and mix by hand until well blended. Knead for several minutes until dough is stretchy. Cover bowl with wet kitchen towel and place in oven that was turned on to 150 then turned off again (or another warm place.) Let rise til double in size. Follow above instructions starting with "Remove dough."
