Grandma Barker used to love how easy these were, and how pretty they are! I always loved that we could make a log of sugar cookie dough, and slice and bake them as needed. They are very buttery, so taste more like a sliced shortbread than a sugar cookie.
Cream butter and sugar. Add vanilla and mix well.
Mix in remaining ingredients (except sprinkles) just until blended.
Shape into a log, about 2 inches in diameter. Roll in sprinkles.
Wrap in wax paper, and refrigerate overnight.
When ready to bake, preheat oven to 375°
Slice log onto 1/4" cookies.
Place on cookie sheet and bake 8-10 minutes.
