Thumbprint Cookies

These are my Mom's favorite Christmas cookie. Carolyn Hynnek used to make them for her years ago, and I ended up taking over the baking duties! I prefer them with jam or jelly, but Mom loves them with candied cherries.

Ingredients

  • 1/2 cup brown sugar packed
  • 3/4 cup butter softened
  • 1/2 tsp vanilla
  • 1 egg yolk
  • 1 1/3 cups flour
  • 1/4 tsp salt
  • 1 cup walnuts or pecans finely chopped
  • candied cherries halved

Instructions

  1. Heat oven to 375°

  2. In a large bowl, combine the first 4 ingredients.

  3. Stir in flour and salt, blending well.

  4. Shape into 1 inch balls, then roll in nuts.

  5. Place 1 inch apart on ungreased cookie sheet.

  6. Press deep indentation into each cookie with thumb, or back of small spoon.

  7. Bake for 8-10 minutes, or until light brown.

  8. Place 1/2 cherry on top of each cookie, then immediately remove from cookie sheet to cool.
