Lemon Bars
Lemon, lemon, LEMON!!!! Beside black licorice, it is one of the flavors my grandma and I secretly shared and devoured. Gosh I loved these things as a kid, and as an adult I found ways to make them even more scrumptious by using Florida lemons and homemade butter.
Ingredients
Crust
- ½ cup flour
- ¼ cup powdered sugar
- ¼ cup butter softened
Filling
- 2 beaten eggs
- 1 cup sugar
- ½ tsp baking powder
- 1/4 tsp salt
- 2 ½ Tbsp lemon juice
Instructions

Preheat oven to 350°

Mix crust ingredients.

Press into ungreased 8x8 pan, building up 1/2 inch edges.

Bake for 20 minutes.

Beat remaining ingredients together until light and fluffy.

Pour over crust.

Bake for 20 more minutes. Sprinkle with powdered sugar.

Cool and cut into squares.
