Ingredients
1lbdried split peas
2lbsleftover ham meator a ham shank
1tspsalt
½tspbasil
1small onionchopped
½tspblack pepper
2quartswater
2medium stalks celerysliced
1medium carrotchopped
Instructions
In a large saucepan, combine first 7 ingredients. Simmer covered for 1 hour. Stir in celery and carrots. Continue simmering covered, for ½ hour or until peas are tender and soup thickens. Remove any bones, and break meat into small pieces.
