Ham and Split Pea Soup

Not everyone loves pea soup. I cannot lie. But peas pack power, baby! They are nutritious, and have tons of fiber. For fun? Slip a few into your next batch of guacamole! -Stacey


  • 1 lb dried split peas
  • 2 lbs leftover ham meat or a ham shank
  • 1 tsp salt
  • ½ tsp basil
  • 1 small onion chopped
  • ½ tsp black pepper
  • 2 quarts water
  • 2 medium stalks celery sliced
  • 1 medium carrot chopped


  1. In a large saucepan, combine first 7 ingredients. Simmer covered for 1 hour. Stir in celery and carrots. Continue simmering covered, for ½ hour or until peas are tender and soup thickens. Remove any bones, and break meat into small pieces.
