I made this for YEARS. I love potato salad. The one person who made potato salad better than anyone I have ever met, was Jane Magnuson. I asked her what her trick was, because I knew she had one. Ingredients
3-4medium potatoescooked and cubed
2Tbsppickle juice
2hard-boiled eggschopped
½red onionchopped fine
2stalks celerychopped small
1tspsalt
1tspred pepper
¼tspblack pepper
¼tspbeau monde seasoning
1/2cupCool Whip
1/4cupmayo
1Tbsphot mustard
½tspsugar
Dry Rub seasoning or smoked paprikato taste
Instructions
In a large bowl, combine potatoes and pickle juice. Let brine for at least an hour. Add remaining ingredients. Mix well. Cover and chill. Sprinkle with extra Smoked Paprika for garnish
