Potato Salad

I made this for YEARS. I love potato salad. The one person who made potato salad better than anyone I have ever met, was Jane Magnuson. I asked her what her trick was, because I knew she had one. Cool Whip was her secret. So I adjusted my recipe to include Cool Whip. Thank-you, Grandma Jane! -Stacey

Ingredients

  • 3-4 medium potatoes cooked and cubed
  • 2 Tbsp pickle juice
  • 2 hard-boiled eggs chopped
  • ½ red onion chopped fine
  • 2 stalks celery chopped small
  • 1 tsp salt
  • 1 tsp red pepper
  • ¼ tsp black pepper
  • ¼ tsp beau monde seasoning
  • 1/2 cup Cool Whip
  • 1/4 cup mayo
  • 1 Tbsp hot mustard
  • ½ tsp sugar
  • Dry Rub seasoning or smoked paprika to taste

Instructions

  1. In a large bowl, combine potatoes and pickle juice. Let brine for at least an hour. Add remaining ingredients. Mix well. Cover and chill. Sprinkle with extra Smoked Paprika for garnish
