Strawberry Pie

It was the heart of summertime when my mom made this for dessert. This will always be one of my favorites.

Ingredients

  • 1 pkg Junket (brand) Danish Dessert strawberry flavor
  • 2 cups water
  • 1/2 cup sugar
  • 2 cups strawberries hulled and sliced

Cookie Crust

  • 1/2 cup butter
  • 1 cup flour
  • 2 tbsp sugar

Instructions

  1. Heat the Junket, water and sugar over medium heat just to boiling. Remove from heat and let cool.

  2. Add strawberries.

  3. Preheat oven to 375 degrees.

  4. Mix butter, flour, and sugar, and press into a large pie pan.

  5. Bake for 12 minutes, or until lightly browned.

  6. Let cool, and add glazed strawberries.

  7. Refrigerate.

  8. Serve with whipped cream (if desired.)
