Flaxseed Muffin in a Cup

This is a super easy, quick breakfast. Flaxseed has fiber, and flaxseed oil is great for hair and skin. Once you've made this a few times, you'll likely come up with a few fun variations.

Servings 1


  • 1/4 cup ground flaxseed
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • 1 tsp coconut oil
  • 1 egg
  • 1 packet Stevia


  1. Mix together and microwave for 1 minute.
  2. Eat plain, or top with berries.
  3. Almond variation:
  4. Substitute almond oil or melted almond butter (oil has a light flavor, butter has distinctly nutty flavor)
  5. Dash of almond extract (if desired)
  6. Chocolate variation:
  7. Add in a tsp unsweetened cocoa and handful of dark chocolate chips before nuking
