Flaxseed Muffin in a Cup
This is a super easy, quick breakfast. Flaxseed has fiber, and flaxseed oil is great for hair and skin. Once you've made this a few times, you'll likely come up with a few fun variations.

Ingredients
- 1/4 cup ground flaxseed
- 1 tsp baking powder
- 2 tsp cinnamon
- 1 tsp coconut oil
- 1 egg
- 1 packet Stevia
Instructions

Mix together and microwave for 1 minute.

Eat plain, or top with berries.

Almond variation:

Substitute almond oil or melted almond butter (oil has a light flavor, butter has distinctly nutty flavor)

Dash of almond extract (if desired)

Chocolate variation:

Add in a tsp unsweetened cocoa and handful of dark chocolate chips before nuking
