Holopchi (Stuffed Cabbage Rolls)
Whether it be dolmades or lettuce wraps, I think every culture has a version of rice and meat wrapped up in a leaf. Here is a lovely Polish variety, with cabbage, beef and tomato sauce.
Ingredients
- 12 cabbage leaves
- 1 lb ground beef
- 1/2 cup instant rice uncooked
- 1 medium onion chopped
- 1 tsp salt
- 1/2 tsp black pepper
- 1 clove garlic minced
- 15 oz can tomato sauce divided
- 1 tsp sugar
- 1/2 tsp lemon juice

Preheat oven to 350°

Bring a large pot of water to a boil, add cabbage leaves. Turn off heat.

Cover and let stand about 10 minutes, until leaves are limp (about 10 minutes.) Drain.

Mix ground beef, rice, onion, salt, pepper, garlic and 1/2 cup of the tomato sauce.

Place about 1/3 cup of this mixture onto the stem of each cabbage leaf, roll leaf around mixture, tucking in ends.

Place cabbage rolls, seam-side down in a baking dish.

Mix remaining tomato sauce with sugar and lemon juice and pour over cabbage rolls.

Cover, and bake for 45 minutes.
