
Lemon Drop Cookies
Whether it be lemon donuts, lemon bars, lemon cake, Grandma Barker loved lemon anything as much as I did.
I always loved trying new recipes,and this one I tried, Christmas 1984, in what turned out to be her last Christmas. I will never forget her tasting them, and saying, “ I never thought I could have a new favorite cookie after all these years!”
Ingredients
- 1/2 cup butter
- 1/2 cup sugar
- 2 eggs
- 3/4 cup flour
- 3/4 cup cornstarch
- 2 tsp baking powder
- 1/4 tsp lemon extract
- powdered sugar for rolling
Filling (mix together, and cook over low heat just until thickened):
- 1 egg
- 3 tbsp lemon juice
- 2/3 cup powdered sugar
- 1 1/2 tbsp butter
Instructions

Preheat oven to 425°

Cream together butter and sugar.

Add eggs, mixing well.

Add flour, cornstarch, baking powder and lemon extract. Mix well.

Drop by teaspoon unto a lightly greased cookie sheet.

Bake for 10 minutes.

Spread filling between two cookies.

Roll in powdered sugar.
