Grilled Bruschetta
This is such a lovely appetizer, whether made at home or eaten in a restaurant. No matter what, Jaime and I are sure to fight over the last piece!
Ingredients
- 4 ripe tomatoes
- 1/2 cup olive oil separated
- 1 tsp salt
- 2 tsp fresh black pepper
- 2 cloves garlic peeled and chopped fine
- 5 leaves basil chopped fine
- 8 slices baguette bread
Instructions

Prepare grill.

Core and slice tomatoes in half across the equator.

Toss the tomatoes with half of the olive oil and season with salt and pepper.

Place tomatoes on grill, cut side down. Cover and cook for 10 minutes.

Turn tomatoes over and cook for an additional 5 minutes. (Do not allow tomatoes to burn.)

Remove from grill and let cool. Remove and discard skins.

Dice the tomato and toss with salt, pepper, garlic and basil.

Brush the bread with remaining oil.

Place on grill for about 1 minute each side, or until crispy.

Place tomato mixture on top and serve immediately
