Lazy Blondie Cookies

For as much as I love to make cookies and BAKE cookies and create cookies, I do have a few recipes that fall into the “lazy cookies” category, because sometimes I just don’t wanna:

…bring the butter to room temperature, use two different bowls for the dry and the wet, add eggs one at a time… not to mention having to watch the oven by time, smell, appearance… don’t even start me on sifting flour or “remove the cookies off the pan NOW and risk them falling apart, or have them hang out on the pan a while and risk them being permanently glued to said pan.”

Yeah.

Well, here is a recipe for some super easy chocolate chip cookies. It uses the basic Blonde Brownie recipe, so you only need one pan (or bowl) and you can stir versus hauling out the beaters. If you want to be LAZIER? Press the dough into a greased 9 inch square pan and bake for 20-25 minutes. If you want to be LAZIEST? Well, baking is overrated.

 

 

    Blondie Cookies

 

½ stick butter
1 cup brown sugar, packed
1 egg
1 tsp vanilla
¾ cup flour
1 tsp baking powder
½ tsp salt
8 oz milk chocolate chips

Heat oven to 350. Melt butter over low heat, remove from heat (may also microwave, approximately 45 seconds on high.) Mix in brown sugar, eggs, and vanilla. Stir in remaining ingredients. Shape into small balls and put about 8 cookies to a lightly greased cookie sheet (these cookies spread out quite a bit, so don’t overcrowd the pan.) Bake about 8 minutes, or until the tops start to look dry and crackly. Cool slightly before removing from pan.
