Malibu Rum Cake

Malibu Rum Cake

This was a little invention of mine after I tried an original rum cake for the first time. This is pure bliss if you love the chocolate and coconut combination. I sure do!


  • 1/2 cup water
  • 1 pkg Devil's Food cake mix
  • 1/2 cup oil
  • 1 small pkg instant chocolate pudding
  • 1/2 cup Malibu rum
  • 4 eggs
  • 1 tsp coconut extract
  • 1 bag mini Mounds bars
  • hot fudge sauce as garnish


  1. Preheat oven to 325°

  2. Grease a Bundt pan.

  3. Mix together water, cake mix, oil, pudding mix, and rum. Beat until smooth.

  4. Beat in eggs, one at a time.

  5. Pour half of batter into pan.

  6. Layer in Mounds bars, trying not to touch edge of pan with candy.

  7. Pour in remaining batter.

  8. Bake for 1 hour.

  9. Let cool, and then invert onto a plate.

  10. If desired, may pour a little more rum over cake.

  11. Drizzle with hot fudge sauce.
