Organic Homemade Chocolate

Buying organic, or even "simple ingredient" chocolate can be expensive. This is a simple recipe for homemade dark chocolate, and you can add in anything you like, from peppermint oil to cacao nibs to chopped nuts. If you don't have a mold to use, pour mix into cupcake papers, silicone muffin cups, or pour onto a cookie sheet lined with parchment paper, and break into pieces after cooling. For milk chocolate, add 2 tbsp powdered milk or coconut milk in with cacao powder.

Ingredients

  • 6 tbsp cacao butter chopped
  • 3 tbsp coconut sugar (put in blender until a fine powder)
  • 5 tbsp cacao powder
  • 1 tsp vanilla
  • 1/4 tsp salt

Instructions

  1. In bottom of double boiler (or bowl put over saucepan) heat 1 inch of water over medium heat until simmering.

  2. Melt cacao butter in top of double-boiler(or bowl) just until melted. (Don't overheat, or it will separate from sugar when it is molded.)

  3. Beat in sugar.

  4. Remove from heat and stir in cacao powder, vanilla and salt.

  5. Pour into molds.

  6. Cool in fridge or freezer and remove from molds.
