Pizza Sauce
As a teenager, I worked at a pizza restaurant, and absolutely loved their pizza sauce. I created a recipe that was as close as I good get. There are clone recipes online, but I think this one is better.
This is a very thick sauce, and we used to paint it on the pizza "skins" with a paintbrush. It is sweet and spicy, and should be used sparingly. I think it tastes better after being refrigerated for a day, but can be used right from the saucepan. This recipe should make enough sauce for two normal size pizzas.
Ingredients
- 1/2 onion minced
- 2 tbsp oil
- 6 oz tomato paste
- 1-2 garlic cloves minced
- 2 tsp brown sugar
- 1 tsp basil
- 1 tsp oregano
- 1/2 tsp salt (or to taste)
- 1/2 tsp red pepper flakes
- 2 tbsp beer (can use wine)
Instructions

In a small saucepan, heat onion in oil until starts to tenderize.

Add minced garlic clove, cook for another minute.

Add remaining ingredients. Bring to a gentle simmer, then reduce to low.

Heat for an additional 20 minutes.
