Potato Pancakes

These always hit the spot. They make a wonderful side dish at dinner, but especially fabulous when served with bacon, eggs and pancakes!


  • 1 pkg Simply Potatoes Shredded Hash Browns
  • 1 carrot shredded
  • 1/4 cup onion chopped fine
  • 1 tbsp flour
  • 1/2 tsp salt
  • 2 eggs slightly beaten
  • 1 tbsp vegetable oil


  1. In a large bowl, stir together hashbrowns, carrot, onion, flour and salt.

  2. Stir in beaten eggs.

  3. Heat oil in a large non-stick skillet over medium heat.

  4. Drop 4 generous 1/4 cup of mixture into hot oil. Flatten slightly.

  5. Cook each pancake for about 2-3 minutes on each side, or until golden brown.

  6. Cook remaining pancakes, adding more oil if necessary.

  7. Drain pancakes on paper towel.

  8. Top with sour cream (if desired.)
