Pepperoni Calzone

I took some basics from the Buca di Beppo calzone recipe, but used my own pizza sauce and pizza dough recipes. This was SO tasty! The crust actually turned out crunchier than when I make pizza. I did pepperoni in this simple recipe, but feel free to stuff this "angry pizza" with your favorite ingredients.

Ingredients

  • cornmeal for dusting
  • ball homemade pizza dough rolled into a 12" circle
  • 1/4 cup pizza sauce
  • 1/4 cup shredded mozzarella
  • 2 oz sliced pepperoni
  • 1 tbsp olive oil
  • 1 tbsp grated Pecorino Romano cheese

Instructions

  1. Place pizza stone in center rack of oven. Preheat to 450°.

  2. Liberally sprinkle a pizza peel with cornmeal, and place flattened pizza dough on it.

  3. On on side of the dough, spread pizza sauce, taking care not to hit edges.

  4. Sprinkle on mozzarella, then add pepperoni.

  5. Fold the other half of the dough over the ingredients to form a half-circle, and push the edges in the seal.

  6. Brush oil over the top of the calzone, then sprinkle with Romano cheese.

  7. Slide calzone directly onto the pizza tone, and bake until golden, about 15 minutes.

  8. Serve with immediately.

Recipe Notes

This is my favorite pizza sauce, as it is sweet, thick and spicy.

This is my favorite pizza dough recipe, but feel free to use your own, or even use frozen bread dough to make these a little easier!
