  This southern delicacy is made with Chessmen cookies instead of Vanilla Wafers, which seem to hold their crunch a little longer.

  I found this recipe years ago when I was too lazy to roll out a bottom pie crust, but didn't want to use one from the store. It's super easy, and works great for pies that don't need a top crust.

I created this lovely recipe in the early 1990's when we had a bumper crop of raspberries. It is wonderful served warm with vanilla or cinnamon ice-cream. This recipe uses a square pan, but is fun to do in individual ramekins as well.
